Juvia is one of those unforgettable restaurants that keep popping into my mind every now and then. Not only because of the food but also because of the view and their retractable roof.
I was joined by Norma and her husband Phil on this culinary journey. The food, as always, was interesting and quite unique.
We started with Gyozas, a special they had that day. I would be lying if I told you what the gyozas were filled with but they were extraordinary.
The Rock Shrimp Tiradito served with aji Amarillo and garnished with micro greens was also an instant hit.
Hamachi Espuma, a dish served with yuzu kosho espuma and micro cilantro was just heavenly, the espuma being as light as a cloud, replete with deep flavor.
Salmon Nashi with truffle oil, dry miso and micro arugula was also divine.
The Burrata with Pata Negra was served with fennel arugula salad, tomato toast and mustard oil. Excellent.
Sea Scallops Plancha with maitake, shiitake, garlic chips and greens was also memorable – the scallops fresh, the mushrooms adding great texture and contrast to the delicacy of the scallops.
Phil has a dessert test he gives restaurants. He orders vanilla ice cream with a chocolate topping, something that is not always on the menu, especially in a restaurant like this. They did come up with it and passed with flying colors.
